DELISH WAY TO EAT HEALTHY!

It's that time of year when everywhere we look there are commercials, magazine articles and morning TV segments all focusing on getting in shape with weight loss, healthy food, and exercise. 

In today's blog I'm featuring two light recipes. One is a slightly sweet cookie recipe Chocolate Chip Kale Cookies, and the other is a light Tomato-Tortilla soup recipe that will take the chill off when those cold wintry days hit.




My husband bought me the Fifty Shades of Kale cookbook for Christmas shown above. I've gone a little kale crazy lately!  The recipe on today's blog is from different source just follow the link below.

The bottom of the cookie gets a bit crunchy and tends to brown a little more than normal. I watched the first batch carefully so as not to overbake. All ovens are not created equal especially when it comes to temperature so you may want to test your first batch by setting the timer for a little less than the recipe says.  I tasted the cookie, and there was no real kale taste at all. The chocolate chips are a nice addition to this slightly sweet treat.

OK, so I teased you with the cookie recipe now how about something warm to keep you nice and toasty?  This delicious soup recipe is Tomato-Tortilla. The recipe was taken from Ellie Krieger's book, The Food You Crave. At 220 calories per 2 cup serving the portion is good size with a terrific fresh tomato flavor. Hubby likes a grilled cheese sandwich served with his soup!
