CAULIFLOWER CHOWDER

I'm always in search of a good chowder recipe. This isn't your normal chowder, it's made with cauliflower! 

My favorite recipes are those that don't require a lot of prep, and that are basically a good healthy choice. I like to have these recipes stashed away for those busy nights or just when we want something light.

We had a builder meeting that ran late tonight, and I wasn't really interested in making a big meal. I decided this would be a perfect night to try this chowder. I grilled up a couple of chicken breasts for a little protein fix, and our quick dinner was served.

Today's recipe....Cauliflower Chowder.




The recipe calls for one head of cauliflower. One cup of this cruciferous vegetable contains 73% of our daily requirements for Vitamin C and a host of other Vitamins, making Cauliflower an excellent choice for any meal.

The addition of carrots, celery, chicken broth, onion and garlic give the creamy broth terrific flavor. In the end, adding a few slices of diced bacon was a delicious touch.

Prep is quick and easy--melting butter in a stockpot and adding garlic, onion, carrots, and celery cooking until tender. Stir in the cauliflower and bay leaf. Cook for 3-4 min.
