UNIQUE BOW TIE PASTA SALAD

Have you ever been hungry for a good pasta salad? I don't usually make a lot of pasta salads anymore, but since this was the last picnic weekend, I thought it was appropriate to make one.  I love using citrus juices in my dressings. They aren't calorie laden and seem so fresh and delish. 

I found this recipe on Cooking Light. It caught my eye because of the unique combination of ingredients. Stop over to the blog today and check out how all of these incredible ingredients all come together.........


The recipe is low in calories and high in protein. It actually could be served as a light meal anytime. The prep takes no time at all, just a little slicing and chopping and cooking the 3 cups of bowtie pasta. 

Another really simple part is that you don't have to roast your own chicken. Grab one from the grocery store. How easy is that? I absolutely love the convenience of roaster chickens. This time I'm just shredding a bit of the chicken to stir into the pasta and other ingredients.

It's so easy to shred.........



The dressing ingredients.....orange and lemon juices, olive oil, salt and pepper (go easy on the salt), stone ground mustard, and rice vinegar. Give it a good whisk and poor over your pasta and other ingredients.
