SAVORY TOMATO PIE

Welcome to Foodie Friday!

It's that time of year when tomatoes are abundant.....so what do we do with all of those fresh delicious tomatoes?  How about make a Fresh Tomato Pie? Yes, that's what I said, pie!

Some of you are very aware of this delightful savory dish. For those that are not......you are in for a real treat! 





This savory goodness is filled with sliced tomatoes, onion, bell pepper ,eggs, flour, milk, seasonings, and grated Swiss, Monterey Jack or Mozzarella cheese. A simple prepared pie crust is the foundation for the easy and delicious pie.




Place the pie crust in the pie plate.....crimp the edges.

Slice tomatoes and add on top of the crust.......



Layer starting with the tomatoes, then add sliced or chopped onion bell pepper and onion....




Whisk the eggs and milk together, add flour, and sprinkle the spices over the top of the veggies and onions.........



Top with grated cheese of your choice..... (I used shredded mozzarella)





Bake at 375 for 50 minutes.......Cool for 15-20 minutes.

I made this pie for a quick dinner, added a simple green salad, and we had dinner in a little over an hour.....and it was hubby approved too!

So don't waste those tomatoes.......surprise your family with a delish "Fresh Tomato Pie!"
