Cinco de Mayo is celebrated on May 5th. The
date commemorates the Mexican army’s victory over French forces at the Battle
of Puebla in 1982. To commemorate this day of celebration, I have put together a few rather interesting and unique recipes for
a party or
just for your own dinner.
Starting with Pomegranate Margaritas……..
I love a good Margarita....my favorite using Jose Cuervo Gold Tequila....but I decided to try this Pomegranate Margarita made with Silver Tequila for tasting purposes of course! Hubby and I both enjoyed the unique taste very much. Besides....they are a beautiful color also!

In my house most of us enjoy a good Shrimp Cocktail with a spicy horseradish sauce. This
Mexican-Style Shrimp Cocktail recipe has a nice twist with the Mango Chipotle Vinaigrette dressing and the clam-flavored tomato cocktail....really a must try!

For those of you that love Buffalo chicken, this twist is a great change from the traditional beef tacos. The marinade gives the chicken a nice zip.

I diced the chicken quite fine after it was baked. The combination of the Blue Cheese Cilantro dressing, chopped Buffalo chicken and the Corn Avocado Topping....is an interesting tasty twist on a traditional taco that everyone will enjoy!

The final addition to my Cinco de Mayo menu is an Easy Mexican-Inspired Hummus. Most of us love a good hummus, and the twist on this recipe is that it contains Pico de Gallo and Cilantro. Yummy!
