Last weekend I made a new sandwich for hubby. It went over so well, I thought I would share the recipe with all of you. It's the perfect accompaniment to a hot bowl of soup, and a great recipe to make during the upcoming Lenten season. This year Ash Wednesday, or the first day of Lent, is on February 10th.
The Sweet and Spicy Grilled Cheese Sandwich has a nice flavor from the grilled onions, and is full of cheesy goodness from two types of cheese. The final addition of a slice of tomato completes this hearty sandwich.
I found the recipe in one of my favorite cookbooks from Ellie Krieger, The Food I Crave.

Begin by browning the purple onion. Add 1 slice of Sharp Cheddar on top of a slice of whole wheat bread. Then add 1 tbsp. of onion, and a slice of Pepper Jack cheese and a large slice of tomato.
Brown in a greased skillet until deep brown, cheese is partially melted. Flip and do the same on the other side. (See recipe for details)
Slice in half and serve with your favorite meatless soup! Between the warm toasted bread, the melted cheeses and the sweet grilled onions.........it's totally yummy!
